Paleo Blueberry "Pancakes"
Blueberries are starting to grow on me. I was never really a fan (still not a huge fan), but I have been incorporating them into my breakfast recipes as I know they have a lot of health benefits. They are starting to taste better and I don't close my eyes and make this face while eating them.
I doubled the recipe to make extra pancakes which I quickly regretted because I spent a good 2 hours making pancakes. You live and you learn. I give these a thumb's up. Easy way to make breakfast for the week if you don't have time to cook in the morning.
Paleo Buffalo "Wings" w/ Sweet Potato "Tater Tots"
As a side I made some Paleo sweet potato tater tots. This was my first time making these and it was an interesting process. They don't really look like tater tots and that could be because my son was not feeling me cooking during daddy son bonding time on Sunday. I did what I could and what I lost in appearance, I made up for in flavor. These are a great side dish and if you close your eyes and dream of tater tots, you can easily fool yourself into thinking they are the same exact thing.
